The typical growing season sees gentle, mild and cool conditions. Cool nights and mild days extend the growing season while retaining natural acidity. Fruit quantity was balanced  with  fruit quality in order to extract vibrant aromas and intense flavours to produce this excellent Prosecco. Harvest Date: February

Vinification and Maturation: The fruit for the NV prosecco is picked late February at I 0.5 baume. early in the morning and and quickly pressed off skins into tank for fermentation with some solids to  provide  complexity and richness. The wine was left on yeast lees with weekly stirring to maintain the freshness the wine and add complexity.
